What tastes better than a home made fried snack , thats not only healthy but finger licking good !
here goes a very easy recipe for aalu samosas : this recipe makes nice sized 12 samosas.
Plain white flour – 2 cups
Pure Desi Ghee – 2 tblspns
Salt – 1/4 tsp
Cumin – 1/2 tsp
Luke warm water as needed
Potatoes – 4 medium sized, boiled and roughly crushed (do not mash fully)
Salt – 1 tsp (or to taste)
Red chili coarse ground – 1/2 tsp
Chat Masalah – 1/2 tsp
Fresh Coriander – chopped 2 tblspns
Fresh Mint – chopped 2 tblspns
Green Chilies – 3 medium finely chopped
All Spice powder – 1/ 2 tsp
Green Peas – 1/4 cup boiled (optional)
Mix flour, desi ghee , salt , cumin. Then add little water at a time and knead a medium soft dough. Cover with Cling Wrap and leave aside for half an hour.
Prepare the filling mixture from adding together all other ingredients.
Make small balls out of the dough. Using a rolling pin, flatten each of them very thin & round and cut into half from a sharp knife. Roll each half side into a pocket in your hand, fill it with a spoonful amount of potato mixture. Stick the ends of samosa by brushing with a little water. Deep fry in nicely medium hot oil. Serve hot.
