Lebanese khbeizat are stuffed mini buns. These are very famous evening tea time snacks and are formed in variety as mini loafs, crescent buns, ping pong ball buns or dinner rolls. Of course you can fill them with your favorite choice of filling, but these are usually filled with tuna fish. Here is a recipe:
Tuna – 400g mashed
Green Olives – 1 cup chopped
Harissa – to taste
Mix all these together for filling.
INGREDIENTS FOR BUNS:
Dry yeast – 2 tblspns
Butter – 75 g melted
Salt – 1 tblsp
Flour – 3 & 1/2 cups
Milk – 1 & 1/2 cups
Nigella or Sesame seeds as needed
Add yeast in half milk and set it aside to prove. Melt butter, mix in the remaining milk and set aside to come to room temperature.
Then add these both into flour & salt. Knead for some time. Then set aside for an hour.
When risen, divide the dough into 4. Flatten each of them with rolling pin. Divide into 8 pieces. Stuff and roll.
Brush them with egg and sprinkle seeds. Bake for 15 mins in preheated oven.
