MINION FONDANT CAKE

Yummy, amazing looking and absolutely exquisite cake that everyone will surely love. By following this recipe you will find fondant cakes and decors quite easy !! Here is a full fledged step wise recipe from scratch.

1. Fondant

2. Vanilla sponge Cake

3. Chocolate Cake

4. Butter Cream

5. Assembling of the cake

 

1. FONDANT ICING:

Marshmallows – one large bowl (white color)

Water – as needed

Icing Sugar – large bowl

Vegetable shortening – 1 cup

Add 2 tbsp water in marshmallows and microwave for 30 seconds. Take them out , mix well and microwave again for 30 seconds. Take out and mix well. It will be melted. Add in half icing sugar and give a good stir. Apply vegetable shortening on the clean kitchen counter , drop all the mixture on it and start kneading like dough, by gradually adding more sugar till it gets nicely firm. When ready , apply shortening on your hands and rub over the prepared fondant so it doesn’t dry out. Cover it fully with cling or seal bag and keep in a cool room for minimum 12-18 hours before using.

Before using, divide in required portions and add few drops of yellow and black color. Knead again so the color is fully merged in.

 

2. VANILLA SPONGE CAKE:

Butter – 1 cup (226 g ) room temp

Sugar –  1 & 1/2 cup (if you are not covering this cake with sweet fondant icing, then add 2 cups of sugar for plain sponge cake. I reduce sugar to balance it with the sweetness of icing)

Vanilla Essence – 2 tsp

Eggs – 4 (room temp)

Salt – 1/4 tsp

Baking powder – 1 tblsp

Milk – 1 cup

All Purpose Flour – 3 cups

In an electric beater or a stand mixer ,beat butter , then slowly add sugar. When mixed, beat again on fast for 5 mins.

Add essence and beat for a minute.

Add eggs one by one by continuous beating till all are mixed well.

Sift all dry ingredients together. Turn on the mixer and gradually add dry ingredients and milk alternately.

Bake in a prepared pan, in a preheated oven at 200 deg C ,for 40-50 mins or till done.

Cool completely.

 

3. CHOCOLATE CAKE:

All purpose Flour – 1 & 3/4 cups

Sugar – 1 & 1/2 cups

Cocoa Powder – 3/4 cup

Baking Powder – 1 & 1/2 tsp

Baking Soda – 1 & 1/2 tsp

Eggs – 2

Milk  – 1 cup (room temp)

Oil – 1/2 cup

Salt – 1/2 tsp

Vanilla essence – 1 tbsp

Hot water – 1/2 cup

Add sugar , vanilla essence and eggs in a cake mixer and mix well. This is a very easy recipe so can use bowl and a wire whisker instead of electric mixer too.

Then add milk and mix again.

Sift together all dry ingredients and then add in the above mixture, mix again.

In the end add hot water and carefully mix. Pour in a prepared tin and bake in a preheated oven at 200 deg C for about 50 mins or till done. Cool in fridge before using.

 Desktop

4. BUTTER CREAM:

Butter – 200 g soft

Icing sugar – 450 g

Milk – 2 tblsps

Vanilla essence – 1/2 tsp

Beat butter on medium speed in a stand mixer with paddle attachment for 2,3 mins. When fluffy add half icing sugar and beat. Then add the remaining icing sugar and beat again.

Add milk on low speed, then beat for 3 mins on medium speed.

Finally add vanilla essence and beat for 2 mins on max speed.

Before icing, mix well with spatula to remove all air. At this point u can add some crushed Oreo biscuits to make it a cookie butter cream.

 

5. ASSEMBLING:

Place the vanilla cake on the serving board, make a hollow ring in its center by placing a round cutter. Fill this area with Mn Ms, and candies of your choice. Spread butter cream on the top of cake and place the chocolate cake over it.

Cover the both cakes fully with butter cream icing and even it as much possible.

On the clean and dry kitchen counter spread some corn flour and flatten the yellow fondant till nice and thin, using a rolling pin. Carefully lift it up and place over the cakes. Press nicely from the sides and top to even. Cut all extra fondant.

Cut eyes and mouth shapes from white and black fondant in the same way by flattening them on the counter. Apply a little water underneath and place over the cake as required. Place the cake in cool room (not in fridge) till served. Color the minion glasses silver (with edible silver marker)when the fondant dries well and becomes hard.
